On weekends, my children sometimes ask to go to a nearby ramen restaurant, Chanpontei.
It’s a local ramen chain restaurant borned in Hikone City, Shiga. It has about 60 stores centered around Shiga.
What is chanpon?
Chanpon is a type of ramen that originated in Nagasaki in southern Japan, typically using tonkotsu (pork broth) soup. However, the Chanpon from Shiga, known as Omi-champion, tastes quite different from the original. It is based on soy sauce and the noodle soup is blended with various umami-rich broths such as locally sourced chicken, kombu, and six types of bonito flakes. This golden soup offers a rich yet light flavor that my kids love to slurp up!
Customized Ramen
Start just without seasoning, but its recommended to add some vinegar, which gives the soup more mildly and tasty. You can customize the chanpon, my favorite is the ankake (thick, starchy sauce). It’s so good, especially for colder season.
So why don’t you try ‘omi chanpon’ you probably never know?
